I recently installed longtubes. My wife is insisting I keep the cats on so she can ride in it.

What muffler should I run to get a sound closest to offroad H-pipe? Flowmaster one chambers?

you wont get the sound of an o/r pipe without an o/r pipe..Id suggest some highflowing cats and 2 chamber flowmasters. If your wife wont ride in the car without cats, she wont ride in it with 1chamber flows.
